Ingredients

La Fornaia uses only the finest ingredients, carefully sourced from around the world. All of our ingredients are fully traceable, 100% natural and are specially selected for their quality and flavour. They include:

Canadian Wheat flour:

It is vital to get the basic ingredient right, and many of our breads are made from pure Canadian wheat flour, ground from the best quality, high-protein milling wheat in the world. Canada's strict quality control system produces wheat flour we can rely on to make the best bread.


Olive Oil:

Our Extra Virgin olive oil comes mainly from Andalusia in Spain. The blend we have selected is particularly peppery, because it gives the best flavour after baking.

Olives:

We use only the finest olives in our breads, including Kalamata olives from Greece. Known as the Queen of Olives, these are chosen for their fabulous flavour and succulence.

Our delicious, juicy green olives are specially sourced for La Fornaia from the hills of Andalusia, in the principal olive growing regions of Cordoba and Seville.

Tomatoes:

Our sun-dried tomatoes are grown in the Aegean region of Turkey, laid out under the blue skies of the Mediterranean and left for several days to develop a rich, exotic flavour. To tantalise the taste buds still further, our hand selected Aegean slow roast tomatoes are stored in a special marinade of extra virgin olive oil and basil, then roasted slowly at low temperatures to concentrate the natural sugars and flavours.

Chillies:

Green chillies: Our fresh green chillies are transformed into crisp, extra hot delicacies through an age-old double brining process.

SweetfireTM chillies: These are not for the faint-hearted! The SweetfireTM pepper is a unique, red capsicum with a sweet-heat kick and full of flavour. Ours are infused with the trademark SweetfireTM marinade to deliver that sweet flavour with extra heat.

Peppers:

La Fornaia's fresh bell peppers are cored, deseeded, tumbled in olive oil and sea salt, then roasted to concentrate their flavour and sweetness.

Seeds:

Rich in minerals and high in protein, we use only the best organic seeds to top our range of organic breads.

Our delicious organic pumpkin and organic sunflower seeds come from two specially approved suppliers in China and have a fuller, sweeter, nuttier flavour with no trace of bitterness. Our organic poppy seeds are sourced from suppliers in Turkey and the UK, while our organic linseed comes from both the UK and China. All of our crops are certified by the leading inspection bodies to ensure quality and organic standards.

Cheese:

We use a variety of delicious cheeses, all carefully selected for their extra special flavour, including:

Parmesan: With its crumbly texture and deliciously sharp and scented taste, Twineham Grange Vegetarian Parmesan style cheese is perfect for our breads. Made only from natural ingredients, using age-old methods, the cheese is matured for up to eighteen months. The result is a gorgeous, medium fat cheese, high in calcium and protein.

Davidstow Cheddar: This award-winning cheese from North Cornwall has a wonderfully rich, nutty and superbly-rounded flavour. Made to a traditional local recipe for more than fifty years, Davidstow Cheddar is full of calcium, suitable for vegetarians and free from preservatives and artificial flavourings.

Herbs:

We use a variety of freshly-frozen herbs, all grown in the UK - mainly in Norfolk and Suffolk. Produced on farms to strict growing standards and inspected by the Soil Association, all our herbs are harvested, washed and frozen within two hours to preserve their wonderfully aromatic qualities. We use Basil - sweet and aromatic with a delicate flavour; Oregano - a sun-loving herb with a heady aroma, said to lift the spirit; Parsley - rich in vitamins and minerals with a fresh flavour and Rosemary - a pleasantly pungent herb with a strong flavour.
